Easy Salmon Dinner

This is a great dinner that comes together very quickly and is nice enough to serve to company. It also has the benefit of being healthy so it is a no-brainer for your next meal plan. There are two recipes here, one for the salmon and one for the rice, I served it with green beans from one of those steamer packs just sprinkled with salt and pepper. I got this beautiful salmon from Sprouts during a great sale a couple weeks ago, only $3/pound for fresh salmon. I had the butcher slice up a whole side of salmon into 8oz portions and I froze two of them in small bags. Always take advantage of sales when you see them!

Baked Salmon with Honey, Dijon and Garlic Sauce
Adapted from Table for Two
Serves 2

2 salmon filets, mine had the skin on, no biggie
3-4 cloves of garlic, minced
2 Tablespoons Dijon mustard
1 Tablespoon honey
1 teaspoon Italian Seasoning
1/4 teaspoon cayenne
1/8 cup olive oil
juice of half a lemon
salt and pepper

  1. Preheat oven to 425, spray a small glass baking dish with non-stick spray and place salmon pieces in the dish.
  2. Mix sauce ingredients together and pour over salmon, use a brush to fully coat the fish.
  3. Bake the fish for 15-20 minutes based on the thickness of the filets and how well you like your fish done.
Caramelized Onion Rice
Serves 4

1 half onion chopped finely
1 teaspoon olive oil
salt and pepper
2 cups water
1 cup white rice

  1. In a small saucepan, heat the olive oil, add the onions, salt, and pepper over medium-high heat. Saute until the onions are dark brown.
  2. Add the water and make sure it comes to a boil, add the rice. Stir, cover, and lower the heat to low. Simmer for about 20 minutes, until all the water has been absorbed, fluff and serve.
