Ratatouille Tortellini

This is a great recipe for the New Year while everyone joins the healthy bandwagon, probably for about a month. This will actually make you want it throughout the year so I hope you enjoy a filling and tasty vegetarian dinner! I love Ratatouille and not just because that movie is so stinking adorable, only Disney can make rats loveable. I usually make a big batch of Ratatouille and freeze extra, it does well in that ice box and you can use it over pasta, as a side, over a large baked potato, into a soup (just blend it up or add broth), or throw it over tortellini (basically it is pasta with extra) which is my new favorite way to enjoy it.



Ratatouille Tortellini

Serves 6

Ingredients
  • 5 zucchini, sliced
  • 3 summer yellow squash, sliced
  • 1 medium eggplant, peeled and diced
  • 1 large onion, sliced
  • 2 bell peppers, diced
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 1 Tablespoon minced garlic
  • 1 teaspoon Herbs de Provence
  • 1/2 teaspoon smoked paprika or to taste
  • 1/4 teaspoon cayenne or to taste
  • Salt and Pepper
  • 2 Tablespoons olive oil
  • 1 Package Cheese Tortellini - grab them when they are on sale and freeze
Directions
  1. Heat the olive oil in a large pan on medium high heat, add the onions first and soften until they are transluscent. Add the garlic and cook until fragrant, make sure to not burn it. Add the rest of the chopped vegetables, season with salt and pepper, and cook down until soft, should take about 15 minutes.
  2. Stir in the diced tomatoes and tomato sauce, and reduce the heat to medium low. Add the Herbs de Provence, smoked paprika and cayenne, taste for seasonings and adjust if needed. Cover and simmer while you get the tortellini cooked.
  3. Bring water to a boil and season with a lot of salt and a splash of olive oil, add the tortellini and drain when they float to the top. You can cook them straight from frozen if you have them so that is a time saver. 
  4. Plate the tortellini and top with as much sauce and you like, its all good for you! Enjoy with some Parmesan cheese!
