Pork Cops with Apples and Onions and Buttermilk Mashed Taters
This is another super quick and yummy dinner that we loved. I have two recipes below that you can swap around and use whenever.
You can also use this for entertaining by adding a salad and a delicious dessert. I am all about simple entertaining, something my lovely B taught me is the best way, low stress and everyone is happy!
Pork Chops with Apples and Onions
Serves 4
4 pork chops or loin cuts (whatever is on sale!)
Non-Stick Spray
Salt and Pepper
2 Granny Smith Apples, sliced
1 large onion, sliced
Balsamic Vinegar
1 Tablespoon Olive Oil

1/2 lb potatoes, cubed (I used russets)
1 cup skim Buttermilk
2 tablespoons butter
1 bunch green onions, sliced
Seasoned Salt and Pepper

Pork Chops with Apples and Onions
Serves 4
4 pork chops or loin cuts (whatever is on sale!)
Non-Stick Spray
Salt and Pepper
2 Granny Smith Apples, sliced
1 large onion, sliced
Balsamic Vinegar
1 Tablespoon Olive Oil
- Pat the pork dry and season with salt and pepper. Spray the non-stick in a skillet and heat at medium-high heat. Add the pork when the skillet is hot, sear on both sides for a nice crust, then lower the heat and cover. Cook until internal temperature is 145.
- Add the Olive oil to another skillet and heat at medium-high heat, then add the onions and apples. Caramelize by letting it soften and start to get brown, add a splash of Balsamic and season with salt and pepper.
- Once caramelized and the pork is done - serve the apples and onions on top of the pork. Yum!
Serves 4
1/2 lb potatoes, cubed (I used russets)
1 cup skim Buttermilk
2 tablespoons butter
1 bunch green onions, sliced
Seasoned Salt and Pepper
- Add the potatoes to a large pot and cover with enough water to cover plus one inch over the potatoes. Boil for about 20 minutes on high heat until fork-tender.
- Drain and add back into the pot, add the butter, Buttermilk, seasoned salt, and pepper. Mash with potato masher. Taste and adjust if necessary. Add the chopped green onions and serve
