BBQ Chicken Dinner

This is a super simple dinner I made a while back but it was too good to not suggest that others make it! It is perfect for those warmer evenings that are coming with the spring and summer. There are three parts of this that are little recipes below. I hope you enjoy!

BBQ Chicken
Serves 4

1 lb chicken boneless and skinless breasts
Favorite BBQ Sauce
Salt and Pepper
Non-Stick Spray

  1. Cut the chicken breasts into strips, tender sized, season with salt and pepper. Brush with your favorite BBQ sauce
  2. Spray a skillet with non-stick spray and heat at medium-high heat. Once hot, add the chicken, turning occasionally.
  3. Brush with BBQ sauce a few times to ensure the sauce is caramelizing and serve.
Baked Potatoes
Serves as many potatoes you make

Russet Potatoes
Olive Oil
Salt and Pepper
Foil
Toppings - Sour Cream, Green Onions, Cheese, Butter, Bacon, etc.

  1. Clean the potatoes thoroughly, I use a veggie brush, pat dry. Preheat the oven to 400
  2. Cut a square of foil, large enough to wrap your potato, lay the potato down in the middle and drizzle a little oil, season well with salt and pepper. Turn over and repeat. Wrap the potato fully in the foil and continue with the remainder of the potatoes.
  3. Place wrapped potatoes on a cookie sheet and bake for approximately 1 hour. Check the potatoes to determine if they are done by squeezing with tongs to have a little give.
  4. Unwrap and cut open and serve with desired toppings.
Salad with Balsamic Vinaigrette
Makes about 1 3/4 cups of dressing

1 cup Olive Oil
1/2 cup Balsamic Vinegar
1 Tablespoon garlic, minced
2 Tablespoons brown sugar
1/2 teaspoon cayenne powder
1/2 teaspoon smoked paprika
Salt and Pepper

  1. Combine all the ingredients in a mason jar, shake the living daylights out of it.
  2. Taste and adjust if necessary. Serve on salad greens.
