Easy Peasy Soup with White Cheddar Grilled Cheese

This was a super quick and easy dinner I whipped up and it was tasty. The whole dinner literally takes 15 minutes start to finish.

Easy Peasy Soup
Serves 2

1/2 onion, chopped
1 Tablespoon minced garlic
1 bag of frozen peas, divided
1 can chicken broth
1/4 cup cream
1 teaspoon olive oil

  1. Heat the oil in a pot over medium-high heat, add the onions and cook until they are translucent. Add the garlic and stir until fragrant.
  2. Add the chicken broth, 2/3 of the frozen peas, and any water if it is too thick. Bust out your immersion blender and blend until is the smooth. 
  3. Add the remaining portion of frozen peas and the cream. Stir until hot, serve with desired toppings - sour cream and sliced green onions are fabulous.
White Cheddar Grilled Cheese Sandwiches
Serves 2

4 pieces of your favorite bread - we love Buttermilk Bread
schmear of butter
slices of white cheddar cheese - however cheesey you feel

  1. Spread a little butter on one side of each bread slice, make sure to get the entire face of the bread so it browns evenly.
  2. Place two slices, butter-side down, in a skillet on medium heat. Top with all the cheese your heart desired and finish with the remaining slices, butter-side up.
  3. Turn over after a couple of minutes, until brown. Serve and devour that amazing cheesiness
