Slow-Cooker Beef Pot Roast

Beef Pot Roast is one of those things that just cannot taste bad and everyone loves it without hesitating, unless they are vegetarians and they just don't know what they are missin'! This recipe was adapted from the infamous Pioneer Woman but I updated it to be a slow cooker lover! I start the recipe quite the same way as the original but then I stick in it my trusty Slow Cooker and leave it. This is great to start in the morning while your family is breaking out their cereal, toast, and coffee and then the house will smell amazing for the rest of the day. All you have to do is make some taters to accompany the roast and dinner is served! This also freezes fabulously and I have been known to take the extra beef and turn them into amazing enchiladas, just sayin'...

Slow-Cooker Beef Pot Roast

Serves 10

1 (4-5) lb Chuck Roast
2-4 Tablespoons olive oil
2 whole onions, cut in half
6-8 carrots washed and cut into 2-inch chunks
2 cans beef broth
Salt and Pepper
1 Tablespoon dried rosemary
1 Tablespoon dried thyme

  1. In a large pot, heat the oil on medium-high heat, while the oil is heating, salt and pepper the beef generously, it needs lots of flavor love. Once the oil is super hot, add the onions, flat side down and sear until golden brown, turn over and do the same. Remove the onions to a plate and add the carrots, do the same until they are nice and golden, remove and add to the onions. 
  2. See if you need to add more olive oil and then add the meat. Let it sit for a few minutes to get a nice flavor crust. Turn over and repeat until all sides are caked with brown flavor power. Remove to the plate.
  3. Splash a little beef broth in the pan to get those yummy bits off the bottom of the pot, scrape those into the slow cooker.  Add the beef to the slow cooker and put the rest of the broth along with the herbs until the beef is half submerged. Add the onions and carrots and top the slow cooker.
  4. Cook at LOW heat for 4-5 hours, you will know its ready when it is barely holding itself together. Serve with your favorite mashed potatoes. Enjoy!
