Easiest Black Bean Soup

This is hands down the easiest, fastest, and yummy black bean soup I have ever had. It is perfect for weeknights and can be whipped together in less than 30 minutes. B also love this for leftovers and uses it as a spicy bean dip, yum!


Easiest Black Bean Soup
Serves 4

1 teaspoon oil - canola works great
1 large onion, diced
1 Tablespoon minced garlic
2 cans of Black Beans, drained
1 can of Red Enchilada Sauce
1 can of green chiles
2 cans Chicken or Veggie Broth
1 cup Salsa
2 Tablespoons Chili Powder
Salt and Pepper to Taste
Optional toppings - green onions, sour cream, cheese, corn chips, corn, jalapenos, cilantro, radishes

  1. Heat the oil in a pot and add the onions to start to soften, stirring occasionally. Once they are becoming translucent, add the garlic and lower the heat.
  2. Add the remaining ingredients to the pot and stir together. 
  3. Once heated through, use a stick blender to puree the soup. You can also add it in batches into a blender or food processor but if you have one, use the stick one so you don't have any additional dishes! Once pureed all the way, lower the heat and make sure it is warm when you serve
  4. Top with your favorites and enjoy!
