Kale and Artichoke Soup with Brie-Garlic Toasts
I found the recipe for the soup and I immediately knew that I had to make it, I absolutely love kale and artichokes. The toasts were a happy accident with brie on super sale and coupon and manager special on too many loaves of bread made! B was not super excited for this to be on the meal plan but he admitted that it was more filling than he expected and it was a make-again. Plus, my little munchkin devoured it for dinner and lunch, man, that makes me a proud mama! This would be a great starter for Christmas dinner and the toasts are prefect for appetizers at your next party, I hope you enjoy them!
Kale and Artichoke Soup

Serves 5-6
Ingredients
- 3 Tablespoons Olive Oil
- 1 onion, diced
- 3 Tablespoons minced garlic
- 1 large potato, peeled and diced
- 2 bunches of Kale, cleaned, de-stemmed, and chopped
- 1 15oz can artichokes, drained and chopped
- 2 cans chicken broth - easily subbed for vegetable broth for a veg meal
- 1 cup cream
- dash of cayenne
- dash of nutmeg
- Salt and Pepper to taste
- Heat 2 Tablespoons of the oil in a large pot on medium-high heat, add the onions and season with salt and pepper. Cook until translucent and add the garlic, stir and cook for just about a minute, until fragrant.
- Add the potato, kale, artichokes, and remaining olive oil to the pot, stir and cook for a few minutes.
- Add the broth and seasoning, bring to a boil. Once the potato is tender, lower the heat and blend it smooth, I use an immersion blender.
- Once it is all smooth, add the cream and taste for seasoning. Enjoy this quick and warm bowl of nutrition with some brie-garlic toasts
Brie-Garlic Toasts

Serves as many as you make, 2 per person
Ingredients
- Roasted Garlic Bread, mine was pre-sliced which made it super fast
- Brie Cheese
- Salt and Pepper
- Olive Oil
- Place bread slices on a baking sheet, pre-heat the broiler.
- Slice the brie in thin slices and fit over your bread to cover most of the surface
- Sprinkle with salt and pepper, more than you would think, drizzle with a little olive oil
- Broil for a couple minutes, watch carefully so the bread doesn't burn. Serve these gooey gems up!
