Soup It Up
This is one of our favorite soups and B frequently requests it. B's dad, affectionately known as Pops, had it this past weekend and he fervently asked that I place it on this little bloggy poo. Hope you enjoy it - it is super simple and satisfying, we usually have it with some garlic bread.
1 link of Beef Kielbasa - halved and sliced (you basically want little slices of half moons)
2 cans diced tomatoes
1 bunch Kale - de-stemmed and chopped
2 cans Chicken or Beef Broth
1 large onion - chopped
2 Tbsp. minced garlic
1 tsp. Hot Sauce (Cholula reigns in Casa de Campbell)
1 Tbsp. Olive Oil
Salt and Pepper to taste
1 link of Beef Kielbasa - halved and sliced (you basically want little slices of half moons)

Salt and Pepper to taste
- Heat the olive oil in a large pan and add the onions. Saute the onions until they are starting to brown, add the minced garlic.
- Add the Kielbasa to the pan to get some of that browned yumminess - Kielbasa is fully cooked already so you are just adding some character.
- Add the tomatoes and broth to the pot and lower the heat. Season with the hot sauce and salt and pepper.
- Add in the chopped kale 5 minutes before serving. This will allow the kale to stay bright green and still have a nice crunch to it.
- Ladle up and serve with your favorite bread and a sprinkle of Parm.
