Turkey Sloppy Joes
This is a
great recipe that was from one of my favorite blogs which has sadly disappeared
from the internet. Why can that be unfound and yet the pictures of me in
college, drunk, are still available?! This is a healthy dinner and can be a
classic sandwich, as a pasta sauce or served over a baked potato which is how
us Campbells roll. This recipe has been doubled because it is great to have on
hand in the freezer, my kids love it and it has vegetables so I feel all warm
and fuzzy about serving it!
2 Onions,
diced
6-8 stalks
of Celery, diced
6-8 Carrots,
either grated or diced small
2
Tablespoons minced Garlic
1 small can
of Tomato Paste
2 packages Ground
Turkey, approximately 40 oz
1 Tablespoon
Smoked Paprika
2
Tablespoons Italian Seasoning
1 teaspoon
Allspice
2 cans Tomato
Sauce or Crushed Tomatoes, 30 oz total

Tablespoons Apple Cider Vinegar

Tablespoons Brown Sugar
Salt and
Pepper throughout
- Heat the olive oil in a large pot,
like a Dutch oven, over medium-high heat. Add the onions, carrots, and celery,
season with salt and pepper, cook until the onions are translucent.
- Add the garlic and cook for a couple
minutes until fragrant. Stir in the tomato paste and cook for a few minutes.
- Throw the turkey in and season with
salt and pepper. Cook all the way through and browned. Sauté the spices with
the turkey so they get a bit toasted.
- Pour in the tomatoes, apple cider
vinegar, and the brown sugar. Let it simmer for about 30 minutes or more for
the most flavor.
* To prepare
for the freezer, cool down completely and either package in a Tupperware or
freezer bag.
