Carrot, Zucchini, and Apple Bread
This is a great recipe to make a couple loaves and freeze one to enjoy later, a breakfast you don't have to feel guilty about!
Carrot, Zucchini, and Apple Bread

1/2 cup
unsalted butter, melted
½ cup
vanilla Greek yogurt
3 eggs,
room temperature
¼ cup
fresh orange juice
1 Tbsp
vanilla extract
1¼
all-purpose flour
2 cups
whole wheat flour
½ tsp
salt
2½ tsp
baking powder
¾ tsp
baking soda
1 Tbsp
cinnamon
pinch
of ground cloves
pinch
of ground nutmeg
4 large
shredded carrots
2 large
shredded zucchini (unpeeled)
2
diced, peeled apple
3/4 cup
pecans, chopped

Preheat oven to 350 degrees.

Grease two loaf pans and 2 mini loaf pans

Blend butter, Greek yogurt sugar, egg, orange juice, and vanilla
together.

Combine flours, salt, baking powder, baking soda, cinnamon,
cloves, and nutmeg together.
5.
Fold dry ingredients into wet along with carrots, zucchini,
apples, and pecans.
6.
Pour into prepared pans.
7.
Bake until golden brown, approximately 1 hour, or until loaves
spring back when gently pressed with fingers.
