Shrimp Rolls
This is a great summer recipe since it is so dang hot! We eat these frequently because they are so yummy, fast, and easy. This dinner was served with roasted cauliflower but is good with anything really, chunks of watermelon, salad, fries, chips, whatever suits your tastes
Shrimp Rolls
Serves 2
1/2 lb shrimp, deveined and tail-less (I buy the frozen pack from Costco and thaw)
2 stalks celery, chopped
3 green onions, chopped
1/4 cup mayonnaise
splash of olive oil
Hot sauce, salt, and pepper to taste
2 Hoagie buns, if you are fancy, toasted
- Cut each shrimpy into 3 pieces, this allows for better portability and you can stuff more into your bun. Season with salt and pepper and if you are feeling frisky, a little pinch of cayenne.
- Heat a splash of olive oil in a fry pan and heat at medium high heat. Once hot, add the shrimp and cook through. Make sure to watch them since you do not want them tough and chewy. Put them into a bowl and refrigerate while you prep the rest.
- Chop the celery onions and add the mayo and hot sauce in a bowl, mix and add the shrimp. Finally add the mix to your bun and enjoy!
