Grilled Mahi Mahi with Spicy Crema

This was one of those quick weeknight dinners that was so good, I had to share! I actually do not like Mahi Mahi unless there is something to almost completely mask the flavor but I love my husband and he loves Mahi, so I make it once in a while. This dinner could not have been easier to put together and I served it with a salad and wild rice.

Grilled Mahi Mahi with Spicy Crema
Serves 4

4 Mahi Mahi filets
1 teaspoon Lemon Pepper
Salt and Pepper to Taste
1 teaspoon olive oil

1/2 cup sour cream
1 can red or green enchilada sauce
1 teaspoon hot sauce of your choice

  1. Heat the oil in a large skillet. Season the fish on both sides and add to the hot pan, turning over after about 3-4 minutes, when there is a nice crust, and sear for an additional 3-4 minutes until the fish is firm and cooked through.
  2. While the fish is cooking. Add the sour cream, enchilada sauce, and hot sauce to a small saucepan, heat on low heat, stirring frequently.
  3. Serve the fish over rice and pour the crema over the top and enjoy!
